How do I participate in a Destination: Bacon Domination event?
First you must be registered to compete in one of the six chosen Destination: Bacon Domination events. You can find the schedule here. Once you are registered with the individual event to compete, you need to register for the Destination: Bacon Domination competition by filling out the form on the home page.
Can I use a sauce or glaze?
Sauces, glazes and au jus are optional. If used, it shall be applied directly to the entry and not be pooled or puddled in the container. No side sauce containers will be permitted in the turn-in container. Chunky sauce will be allowed. Chunks are to be no larger than a fine dice, approximately 1/8 inch cubed.
What size should I create?
The dish created should be portioned equally for all six judges. Participant will receive two complimentary 24 oz. packages of Wright® Brand Bacon to use for this competition.
Is garnish required?
Garnish is optional. If used, it is limited to chopped, sliced, shredded or whole leaves of fresh green lettuce, curly parsley, flat leaf parsley and/or cilantro. Kale, endive, red tipped lettuce, lettuce cores and other vegetation are prohibited.
What time is turn-in?
Individual contest organizers will establish turn-in times for their competition. Participants are encouraged to directly contact the contest organizer if they have individual contest questions.
Can I use my own bacon?
Competitors must use Wright® Brand Bacon as the bacon portion of the competition entry. Competitors may use or couple the bacon with other proteins for their entry. Those proteins do not have to be from a specific brand or provider.
What type of turn-in sample should I create?
As with most ancillary categories, competitors should remember the parameters that KCBS judging process provides. Six entries must fit in a standard 9x9 KCBS turn-in box. Judges will be removing entries from the turn-in box using traditional methods of either hand or fork. Entries will be judged on taste, tenderness and appearance.
