LITTLE BIT OF TEXASYear Started: 1979
Hailing from the Great State of Texas, we have built custom BBQ smokers for friends and family since 1974. Usually breaking them in with brisket, ribs, oysters and a billy goat. Thatís right folks, oysters. Being from a coastal town where the oysters are plentiful, we would smoke a sack full after work with plenty of beer to follow. Started cooking local competition back home with a new team Oil Country Cooker for 2 years and then Crown Royal Cooker for 2 years. After moving to South Carolina I built my first competition smoker in 1988 when a boss from Texas asked if I wanted to turn the South Carolinians in Spartanburg on to the taste of brisket. Cooking 200 pounds of brisket for 3 shifts, for 4 events got me back in the competition cooking fever. Over the next couple of years we also catered for weddings, birthday parties and business outings. In 1994 when I heard Tryon was putting on a competition it was time to get back in the Blue Ridge BBQ Festival. Have been cooking there ever since along with other local events like Uniquely Union. We have won multiple times in the pork, brisket, whole hog, ribs and chicken categories.
