Christopher and Gerald Low's very first rib cook during the summer of 1991 was not a success. Our first racks of ribs are what we would like to call, "The Pork Jerky Experiment." We completed our evening eating Pizza from our favorite Pizza place and went back to the drawing board. We took our research seriously and started to learn how "Real Barbeque" is done, hence, "Low and Slow." With the addition of Cecilia Low (Christopher's Wife) who has learned so much in the past decade about BBQ and the flavors of different woods, rubs, sauces and the different BBQ Regions. Cecilia is a valuable source of information when trying out new marinades, rubs, mops, sauces, woods and techniques. It is a dream come true to finally have our own Barbeque Team.
